- beat eggs, gradually add sugar and oil. Combine dry ingredients and add alternately with zucchini. Stir in walnuts and vanilla. Pour into 2 greased 9-X5-X3-inch loaf pans. Bake at 350 degrees for 55 to 60 minutes. May be refrigerated or frozen.
