Tequila Lime Grilled Shrimp
This recipe for Tequila Lime Shrimp are perfect to serve with some warm tortillas and some guacamole or salsa fresca. These shrimp are perfect for a light summer meal. You can also toss these shrimp on some cheesy grits for a more hearty meal.
Tequila Lime Grilled Shrimp
Servings 4 people
Ingredients
- 1 pound large shrimp thawed, peeled, tails on
- 1 each lime juice & zest zest before juicing
- 2 tbsp silver tequila
- 1 tbsp agave nectar
- 1 tbsp Chili Powder
- 1 tsp cumin
- 2 garlic cloves minced
- Salt and freshly ground black pepper to taste
- 2 tbsp olive oil
- 1 lime quartered
- 1/4 bunch cilantro roughly chopped
Optional Finishes
- 20 tortillas warmed
- 1 batch guacamole
- 1 batch salsa fresca
Instructions
- Combine the marinade ingredients in a large Ziploc bag. Add the shrimp and toss gently to coat. Let sit for 30 minutes.
- If using wooden skewers, it's a good idea to soak them in water (or lime water for added flavor) for 30 minutes to reduce burning/splintering.
- Thread the shrimp onto your skewers.
- Preheat BBQ/grill to high. Reduce heat to medium-high, and grill the shrimp for about 4 minutes/side, or until they're pink and gently firm, taking care not to overcook.
- Serve with warm, fresh tortillas, salsa and guacamole. Sprinkle with chopped cilantro and a squeeze of lime.
