Grilled Marinated Vegetables
Nothing goes better with grilled meat than grilled vegetables. This is my favorite way to prepare veggies on the grill. Anything I have on hand works with this great marinade. Try this recipe and you will find yourself grilling all your vegetables this summer.
Grilled Marinated Vegetables
Servings 8 people
Ingredients
- 1 cup zucchini cut into large chunks
- 1/2 cup green Bell Pepper cut into large pieces
- 1/2 cup red Bell Pepper cut into large pieces
- 8 oz fresh Crimini or Baby Bella mushrooms
- 2 small onions cut into large rings
- 1/2 lb large Asparagus snapped and cut into 3 inch pieces
- 1 medium Eggplant cut into 1/2" thick slices
- 1 pint cherry tomatoes
Marinade
- 1/4 cup olive oil
- 1/2 cup Worchestershire sauce
- 1/2 cup Soy Sauce
- 1/4 cup fresh lemon juice
- 3 cloves garlic minced or crushed
Instructions
- Mix all marinade ingredients and set aside while prepping vegetables.
- Wash and prep vegetables for marinade.
- Place all vegetables other than the mushrooms in a zip seal bag with marinade and marinate in the refrigerator for no more than 3 hours.
- Add mushrooms to marinade 15 minutes before grilling.
- Grill on a grate or in a non-stick basket for vegetable grilling until vegetables are nicely browned and slightly softened.
- Serve with your favorite grilled meat or fish.
