Grilled Marinated Vegetables

Nothing goes better with grilled meat than grilled vegetables. This is my favorite way to prepare veggies on the grill. Anything I have on hand works with this great marinade. Try this recipe and you will find yourself grilling all your vegetables this summer.

Grilled Marinated Vegetables

Ingredients

  • 1 cup zucchini cut into large chunks
  • 1/2 cup green Bell Pepper cut into large pieces
  • 1/2 cup red Bell Pepper cut into large pieces
  • 8 oz fresh Crimini or Baby Bella mushrooms
  • 2 small onions cut into large rings
  • 1/2 lb large Asparagus snapped and cut into 3 inch pieces
  • 1 medium Eggplant cut into 1/2" thick slices
  • 1 pint cherry tomatoes

Marinade

  • 1/4 cup olive oil
  • 1/2 cup Worchestershire sauce
  • 1/2 cup Soy Sauce
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic minced or crushed

Instructions

  • Mix all marinade ingredients and set aside while prepping vegetables.
  • Wash and prep vegetables for marinade.
  • Place all vegetables other than the mushrooms in a zip seal bag with marinade and marinate in the refrigerator for no more than 3 hours.
  • Add mushrooms to marinade 15 minutes before grilling.
  • Grill on a grate or in a non-stick basket for vegetable grilling until vegetables are nicely browned and slightly softened.
  • Serve with your favorite grilled meat or fish.
