Wild Rice Pilaf

Ingredients
- 2 oz. butter
- 1/2 medium onion chopped
- 3 celery stalks diced
- 1/3 cup carrot diced
- 1/2 cup slivered almonds
- 1/2 cup wild rice
- 1/2 cup brown rice
- 1 cup fresh mushrooms chopped
- 1 1/2 cups beef broth
Instructions
- In a large skillet, melt butter over medium-high heat and saute onion, celery, carrots, and almonds for two to three minutes. Add rice and mushrooms and saute for four additional minutes. Add broth, cover, and transfer to a preheated 350-degree oven for one hour.
