Sicilian Tomato Salad

Fresh tomato, basil and mozzarella are a classic Italian salad combination. In this version, the cheese is grated and layered with lettuce and red onion and topped with a garlicky basil-anchovy dressing.
Servings 4


  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 1/2 teaspoons crushed dried basil
  • 1 clove garlic crushed
  • 1 anchovy mashed
  • 4 to matoes cored and sliced
  • 1 red onion peeled and sliced
  • 1 head lettuce shredded
  • 1/2 cup grated mozzarella cheese


  • In a mixing bowl, whisk together olive oil, red wine vinegar, basil, garlic and anchovy; set aside.

    On a serving dish, layer tomato and red onion slices over shredded lettuce, sprinkling each layer with some mozzarella and drizzling each layer with some of the vinaigrette. Let stand for 15 minutes after assembling; serve at room temperature.
