Nicoise Salad with Tuna

Ingredients
- 1 oz parsley chopped
- 1 oz capers chopped
- 2 lb red bliss potato cooked, quartered
- 2 red onion julienned
- 16 oz green beans cooked
- 40 nicoise olives pitted
- 20 anchovy fillets
- 10 hard-cooked egg peeled, quartered
- 5 to mato peeled, quartered
- 2 lb tuna canned
- 1 1/2 lb mixed lettuce greens including radicchio

Instructions
- 1. Gently toss the green beans, onions, potatoes, capers, and parsley. Add the vinaigrette, and let marinate for 2 hours. Drain and reserve the excess vinaigrette.
2. Lay the lettuce on a platter. Place the tuna in the center. Arrange the bean-and-potato mixture around the tuna. Garnish the salad with the tomatoes, eggs, anchovies, and olives. Drizzle with remaining vinaigrette.
