Nicoise Salad with Tuna

Nicoise Salad with Tuna

  • 1 oz parsley chopped
  • 1 oz capers chopped
  • 2 lb red bliss potato cooked, quartered
  • 2 red onion julienned
  • 16 oz green beans cooked
  • 40 nicoise olives pitted
  • 20 anchovy fillets
  • 10 hard-cooked egg peeled, quartered
  • 5 to mato peeled, quartered
  • 2 lb tuna canned
  • 1 1/2 lb mixed lettuce greens including radicchio

  • 1. Gently toss the green beans, onions, potatoes, capers, and parsley. Add the vinaigrette, and let marinate for 2 hours. Drain and reserve the excess vinaigrette.

    2. Lay the lettuce on a platter. Place the tuna in the center. Arrange the bean-and-potato mixture around the tuna. Garnish the salad with the tomatoes, eggs, anchovies, and olives. Drizzle with remaining vinaigrette.
