Cream of Zucchini Soup

Cream of Zucchini Soup

  • 3 tablespoons minced onions
  • 2 tablespoons margarine
  • 2 cups chicken broth
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 1/2 pounds sliced zucchini
  • 1 8- oz. container sour cream


  • In a medium saucepan saute grated onion in margarine until tender. Add chicken broth, curry, salt, and pepper. Bring to a boil; reduce heat. Add sliced zucchini; cover and simmer until the zucchini is tender about 5 minutes. Stir in sour cream. Pour into a food processor or blender and process until smooth. Cover; serve chilled.
