Braised Lamb Shanks

Ingredients
- 6 lamb shanks
- 1/2 tsp oregano
- 3/4 cup chopped onion
- 3/4 cup chopped celery
- 3/4 cup chopped carrots
- 3 cloves garlic finely chopped
- 1/4 tsp dried thyme
- 1 cup dry red wine
- 1 cup beef stock
- Salt and freshly ground black pepper to taste
Instructions
- Place the lamb shanks in a large casserole and add the remaining ingredients on top. Cover and bake in a 325F (160C) oven for 1+1/2 to 2 hours, until the meat is falling off the bone. Check periodically and add more liquid if necessary.
