Spicy Peanut Noodles

Ingredients

  • 7 oz Handcut Wheat Noodles
  • 8 oz Pork, ground
  • 2 each garlic cloves
  • 1 1/2 tsp minced fresh ginger
  • 1/3 cup creamy or chunky peanut butter
  • 2-3 tbsp hot water
  • 3 tbsp Soy Sauce
  • 2 tsp Fish Sauce
  • 2 tsp sugar
  • 1/2 tsp Sesame oil
  • 1 tbsp Chili oil
  • 1 tbsp Lime juice
  • 2 each eggs

Instructions

  • Bring a pot of water to a boil for the noodles.
  • Brown your ground pork by placing it in a sizzling hot pan and letting it sit for a full minute to brown before stirring. Once you have browned on most of the meat, add the garlic and ginger.
  • Add your chili oil, sugar, fish sauce, soy sauce, peanut butter, and sesame oil to your pork mixture. Use the hot water to thin your sauce to your desired consistency. Finish your sauce with the lime juice.
  • Cook your noodles to the desired doneness. Cook time should be between 5-6 minutes.
  • Fry your egg while your noodles are cooking.
  • Plate your noodles then top with your sauce and then your fried egg. You can garnish with chopped scallions and chopped peanuts.
