Green Chili Polenta

Green Chili Polenta
Servings: 4

Ingredients

  • 1 small Onion -- minced
  • 3 Clove Garlic -- minced
  • 2 Tbsp Olive Oil
  • 2 cup Water
  • 1 cup milk
  • 1 tsp salt
  • 1 cup Cornmeal
  • 2 cup Monterey Jack Cheese -- shredded
  • 8 oz Corn
  • 8 oz Green Chiles

Instructions

  • Saute onion and garlic in large saucepan. Add water, milk, and salt, and bring to a boil. Add the cornmeal, stirring constantly. Cook 10 minutes. Pour half into an 8x8" greased casserole. Add Monterey jack, corn, and chiles. Top with cornmeal mixture. Bake 30 minutes at 350.
