Green Chili Polenta

Ingredients
- 1 small Onion -- minced
- 3 Clove Garlic -- minced
- 2 Tbsp Olive Oil
- 2 cup Water
- 1 cup milk
- 1 tsp salt
- 1 cup Cornmeal
- 2 cup Monterey Jack Cheese -- shredded
- 8 oz Corn
- 8 oz Green Chiles
Instructions
- Saute onion and garlic in large saucepan. Add water, milk, and salt, and bring to a boil. Add the cornmeal, stirring constantly. Cook 10 minutes. Pour half into an 8x8" greased casserole. Add Monterey jack, corn, and chiles. Top with cornmeal mixture. Bake 30 minutes at 350.
