Ginger Wasabi Dressing

Serve over a hearty, crunchy salad of slivered carrots, celery, red pepper, chopped bok choy, and chunks of tofu. Also try with a fruit salad of papaya, pineapple, and apples. Add more wasabi if you prefer it extra hot.

Ingredients

  • 5 ounces lite silken tofu
  • 1 tablespoon rice vinegar
  • 2 teaspoons vegetable oil
  • 2 teaspoons wasabi powder
  • 1 teaspoon minced shallot or onion
  • 1 teaspoon lemon juice
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1/2 teaspoon minced ginger root
  • Salt and pepper to taste

Instructions

  • In a blender, mix together all ingredients, stopping to scrape down sides as necessary, until smooth.
