Ingredients

  • 5 pounds russet potatoes peeled, washed and cut into 2 inch chunks
  • Water enough water to cover the potatoes in a large stock pot
  • 8 ounce package cream cheese room temperature
  • 1/2 lb butter
  • 1 cup milk
  • 1 teaspoon Mortons kosher salt
  • 1/2 teaspoon ground white pepper
  • 4 roasted garlic cloves roughly a heaping tablespoon

Instructions

  • Put the chopped potatoes in a large stock pot. Add enough water or chicken broth to cover the potatoes. Bring to a boil and cook for 15-20 minutes or until the potatoes are fork tender.
  • Drain the liquid from the potatoes. Return the cooked potatoes to the pan. Return to low-medium heat and stir potatoes until the steam coming off potatoes noticeably decreases.
  • Process potatoes with either a potato ricer or a food mill so that there are no chunks.
  • Heat milk until warm. Add milk, cream cheese, and garlic to potatoes. Mix well.
  • Cut cold butter into small chunks and slowly add to potatoes while mixing vigorously with a wooden spoon. Season with salt and pepper.
  • Serve hot.
