This very basic potato side dish is an Irish favorite! Potatoes slathered in butter.. how can that be anything but good!
Servings 6


  • 4 lb Potatoes
  • 2 cups Chopped scallions
  • 10 fl Milk
  • 4 oz Butter
  • Pepper
  • salt to taste


  • Peel potatoes and cook in salted boiling water.
  • Simmer milk and scallions together for five minutes.
  • Strain potatoes and mash thoroughly.
  • Add hot milk, and the scallions, salt and pepper, and half the butter.
  • Melt the rest of the butter for serving.
