Caribbean Green Seasoning
This Caribbean green seasoning recipe is a must for any Caribbean meat or fish dish. This seasoning can be used to marinate any meat or fish dish before grilling or stewing.
Servings 4 cups
Ingredients
- 1 bunch Cilantro roughly chopped
- 1 stalk celery
- 1 head garlic about 11 cloves
- 4 green onions white and green
- 1 bunch fresh thyme
- 1/4 cup water
- 1 tsp salt
- 2 whole shallots roughly chopped
- 2 whole pimento peppers banana or cubanelle can be substituted
Instructions
- Peel, trim and wash the ingredients. Then drain thoroughly.
- Add all the ingredients into your food processor or blender including the water. You may be required to stir the ingredients occasionally so it all gets properly processed.
- The proper consistency is of a pesto or even a bit more liquid.
Notes
Two key ingredients have been substituted because they are not readily available outside the Caribbean. Those are sado bendi and Spanish Thyme, which we have substituted with cilantro for sado bendi and standard thyme for Spanish thyme. If you can the original seasonings you will need to half the quantities as they are much stronger in flavor and will over-power the dish.
Storage Tips-
You can store this in an airtight container in the refrigerator for a week or freeze in an ice cube tray and unthaw as needed.
