This very basic potato side dish is an Irish favorite! Potatoes slathered in butter.. how can that be anything but good!
- 4 lb Potatoes
- 2 cups Chopped scallions
- 10 fl Milk
- 4 oz Butter
- salt to taste
Peel potatoes and cook in salted boiling water.
Simmer milk and scallions together for five minutes.
Strain potatoes and mash thoroughly.
Add hot milk, and the scallions, salt and pepper, and half the butter.
Melt the rest of the butter for serving.
