Mussels in a St Amboise Amber Beer Sauce

Ingredients

  • 2 lb or 900g Mussels
  • 1/2 cup leaks jullienned
  • 1/2 cup celery jullienned
  • 1/2 cup onions jullienned
  • 1/2 cup carrote jullienned
  • 1/2 cup fish stock
  • 1 tbsp bacon browned lightly
  • 1 tbsp red onions diced

Instructions

  • Combine all ingredients in a covered pot. Cook until all mussels open and enjoy!

    Just before serving the mussels pour 1/4 cup of additional beer over the finished dish.
