Matcha Green Tea Cupcakes

Beautiful green cupcakes that are so perfect for Spring parties or St Patrick's Day.

Ingredients

  • 24 cupcake papers
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 cup milk
  • 2 tablespoons Matcha tea
  • 4 recipes Matcha Buttercream Frosting

Instructions

    For Cupcakes:
  1. Beat butter on high until soft, about 30 seconds. Add sugar. Beat on medium-high until light and fluffy, about 3 minutes. Add eggs plus egg yolks one at a time, beat for 30 seconds between each. Whisk together flour, baking powder, and salt in a bowl. Add to batter and mix to combine. Mix matcha in with the milk. Add to the batter and mix until combine. Scoop batter into prepared into cupcake papers. Bake for 22-25 minutes until a cake tester comes out clean.
  2. For Sheetcake:
  3. Prepare sheet pan by rubbing with butter, covering with parchment, rubbing with more butter, and dusting with flour. Continue with cupcake recipe. Pour into prepared 1/2 sheet pan and smooth flat. Bake for 22-25 minutes until a cake tester comes out clean.

Green Tea Cooler

Ingredients

  • 1 cup green tea, prepared at regular strength
  • 2 kiwi fruit, peeled and diced
  • 2 cups diced honeydew melon, fresh or frozen
  • 1 ripe banana
  • 1 Tablespoon sweetener of choice (optional if fruit is very ripe and sweet)
  • 6 ice cubes

Instructions

  1. Combine all ingredients in a food processor or blender, breaking the banana into three or four pieces. Blend or process until smooth. Serve immediately in tall glasses.

    Variations
    : > Replace part or all of the honeydew with another variety of melon. Make sure it's ripe!
    > For a breakfast smoothie, add 2 Tablespoons soy protein powder and another ice cube.
    > Try different types of green teas: a plain gunpowder , sencha, or fukujyu, or maybe one of the many fruit-flavoured teas that are readily available.
    > Add some fresh ginger: Place a 1/2-inch piece of (peeled) ginger root into a garlic press, hold it over the blender or food processor bowl, and squeeze out the pulp and juice, scraping the pulp off the press if necessary.

Green Tea Poached Fish

Ingredients

  • 4 cups green tea
  • 2 teaspoons grated ginger
  • 2 teaspoons minced garlic
  • 2 teaspoons minced white onion
  • 1 1/2-2 pounds fish (4 small steaks or 2 large ones)
  • Salt and pepper

Instructions

  1. To make green tea, pour hot but not boiling water over tea bags and steep for five minutes. Use one tea bag for every 8 ounces (1 cup) hot water. In a deep skillet, simmer green tea, ginger, garlic and onion for 10 minutes. Salt and pepper the fish, and place the steaks gently into the poaching liquid. Adjust heat to a gentle simmer, and cook steaks 8-10 minutes until fish is slightly translucent. Remove fish. Serve with Green Tea Vinaigrette or with mayonnaise thinned with white wine vinegar and finely grated fresh ginger. Good accompaniments include hot brown rice and sauteed scallions.

Green Tea Sorbet

Ingredients

  • 3 cup water
  • 2 1/2 tablespoons fine-quality Green tea leaves
  • 3/4 cup, plus 2 tablespoons sugar

Instructions

  1. In a small saucepan bring water to a boil. Add tea leaves and remove pan from heat. Cover pan and steep tea 5 minutes. Add sugar, stirring until dissolved, and strain tea through a fine sieve into a bowl. Chill tea, covered, until cold and freeze in an ice-cream maker. Sorbet may be made 1 week ahead.
