Warm Tofu with Spicy Garlic Sauce

Warm Tofu with Spicy Garlic Sauce

This is a very versatile dish that can be used for an appetizer, lunch or light dinner. I tend to keep the sauce on hand and make a quick snack out of it.

Ingredients

  • 1 (12 oz.) package of silken tofu
  • 1 tsp garlic minced and crushed
  • 1/4 cup scallions, chopped
  • 2 tsp sesame seeds, toasted
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp red pepper flakes
  • 1 tsp sugar
  • 2 cups rice, hot and ready to serve with tofu

Instructions

  1. To warm your tofu you can either simmer it in a sauce pan with just enough water to cover or put it in the steamer basket of your rice maker while you make the rice to go along with it.
  2. Mince garlic and crush with the flat side of your knife to make a thick paste of it. Stir together with remaining ingredients minus the rice.
  3. Once your rice is ready carefully plate the tofu and rice and then top with sauce. Serve Immediately.

Sauteed Fiddlehead Ferns with Parsley and Garlic

Sauteed Fiddlehead Ferns with Parsley and Garlic

Ingredients

  • 1-pound Fiddleheads
  • 1 or 2 garlic cloves, minced very fine
  • 1/4 cup butter or extra-virgin olive oil
  • 2 tablespoons finely chopped fresh parsley

Instructions

  1. Salt and freshly ground black pepper Trim any brown ends off of the fern shoots and wash them in cold water, pulling the paper-like brown skin off as you go. Drain and pat dry. Crush the minced garlic with the back of a spoon or the side of a large knife. Heat half of the butter (or olive oil) in a large skillet over medium heat. Add the fern shoots and turn the heat up to medium-high. The ferns should sizzle, but don't allow the butter to burn. Toss and stir for about 5 minutes. Add the butter (or oil), the garlic, and the parsley. Continue cooking for one minute longer, or until you can smell the garlic and the ferns are tender. Season with salt and pepper and serve immediately.

Green Beans with Garlic and Tea

Ingredients

  • 1 lbs. fresh green beans, trimmed
  • 2 cloves of garlic, minced
  • 2 tbs. Keemun tea leaves, brewed in two cups of water

Instructions

  1. Steam green beans in water. While beans are steaming, sautÈ minced garlic in one tsp. of canola oil until opaque. Add brewed tea and simmer with garlic for a few minutes. Remove beans from steamer and put in a large bowl. Pour tea marinade over drained beans. Garnish with toasted almond slices, as desired. Serve immediately.
