Sour Cream Apple Pie

This Sour Cream Apple Pie is my kids favorite apple pie. This pie reminds me of an apple cheesecake but it is so much easier to make.

Ingredients

  • 2 eggs
  • 1 cup sour cream
  • 1 cup sugar
  • 6 tablespoons all-purpose flour, divided
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 cups chopped, peeled baking apples
  • 1 (9 inch) unbaked pie shell
  • 3 tablespoons cold butter or margarine
  • 1/4 cup packed brown sugar
  • 1/2 tsp cinnamon. split 1/4 in pie filing and 1/4 in topping

Instructions

  1. In a large bowl, cream sugar and sour cream until smooth. Add eggs and stir well. Stir in 2 tablespoons flour, vanilla, 1/4 tsp cinnamon and salt; mix well. Stir in apples. Pour into pie shell. Bake at 375 degrees F for 15 minutes.
  2. Meanwhile, combine brown sugar. 1/4 tsp cinnamon and remaining flour; cut in butter until mixture is crumbly. Sprinkle over top of pie. Return to oven for 20 to 25 minutes or until filling is set. Cool completely on a wire rack. Serve or cover and refrigerate.

Apple-Barley Pudding

Ingredients

  • 4 tbsp. Pearl barley
  • 1 1/2 lb apples, peeled, cored and sliced
  • 3 tbsp Sugar
  • 3/4 cup heavy cream
  • 1 Tbsp lemon juice

Instructions

  1. Boil the Barley in water and add the apples. Cook until both begin to soften. Drain and blend the mixture in a blender or sieve. Cook the mixture after adding the sugar and lemon and boil again. Allow to cool and then chill, adding the cream on top.

Apple Honey Scones With Sweet Cinnamon Topping

These scones are so much better when served with our Apple Spice Tea.

Ingredients

  • 1/4 tsp salt
  • 2 cups All-purpose flour
  • 1/3 cup Margarine
  • 2/3 cup Wheat germ
  • 1 1/4 cups Apple, peeled, finely chopped
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 cup milk
  • 1/4 tsp Ground nutmeg
  • 1/4 cup Ho

Instructions

  1. 1. Heat oven 400F. Lightly spray large cookie sheet with non-stick cooking spray or grease lightly. Handle the dough gently, over-mixing scones can make them tough.

    2. Combine flour, wheat germ, baking powder, spices, baking soda and salt. Cut in margarine until mixture resembles coarse crumbs. Add combined apple, milk and honey, mixing just until dry ingredients are moistened.

    3. Turn dough out onto lightly floured surface; knead gently 5 to 6 times. Pat dough into 9-inch circle.

    4. Mix together 1 tb wheat germ, 1/4 ts cinnamon, and 1 tb sugar. Sprinkle over dough. Cut dough into 10 wedges. Place 1/2-inch apart on prepared cookie sheet. Bake 16 to 18 minutes or until light golden brown.

These scones go great with our Apple Crunch Tea.

Ingredients

  • 1/2 cup flour
  • 1/2 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/3 cup butter
  • 1 cup quick-cooking rolled oats
  • 1 small apple, peeled, cored and chopped
  • 2 egg whites
  • 2 Tablespoons apple juice or skim milk
  • 2 tablespoons honey

Instructions

  1. In mixing bowl stir together flours, baking powder and cinnamon. Cut in butter till mixture resembles coarse crumbs. Stir in oats and apple. Add egg whites, apple juice and honey. Mix well. Dough will be stick.

    Spray a baking sheet with nonstick coating. With floured hands, pat dough into a 7" circle on baking sheet. Cut into 12 wedges using a long thin-blade spatula. Brush tops with alittle milk. Bake at 400 for 10-12 minutes until golden. Serve warm.
