Cranberry Nut Bread
4 oz orange juice
1/4 cup butter
1 egg
2 cups flour
3/4 cup sugar
1 tbsp orange zest
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 cup cranberries, coarsely chopped
1/2 cup pecans, chopped nuts
Have all ingredients at room temperature. Measure orange juice, butter and egg into the bread pan. In a medium mixing bowl, combine remaining ingredients except cranberries and nuts. Add this mixture to the bread pan. Then add the cranberries and nuts. Set on the setting for quick breads
