Wild Rice Pilaf
2 oz. butter
1/2 medium onion, chopped
3 celery stalks, diced
1/3 cup carrot, diced
1/2 cup slivered almonds
1/2 cup wild rice
1/2 cup brown rice
1 cup fresh mushrooms, chopped
1 1/2 cups beef broth
In a large skillet, melt butter over medium-high heat and saute onion, celery, carrots, and almonds for two to three minutes. Add rice and mushrooms and saute for four additional minutes. Add broth, cover, and transfer to a preheated 350-degree oven for one hour.
