Grilled Pepper and Black Olive Relish

Ingredients

  • 1/4 cup pitted black olives, chopped

  • 1/4 cup grilled red bell peppers, seeded and diced

  • 1/4 cup grilled yellow peppers seeded and diced

  • 2 tablespoons crushed red pepper flakes

  • 1 tablespoon fresh garlic

  • 2 tablespoons fresh thyme

  • 1/4 cup chopped fresh parsley

  • 2 tablespoons sherry vinegar

  • 1 tablespoon honey

  • 3 tablespoons olive oil

  • Salt and freshly ground pepper to taste

Instructions

In a mixing bowl combine all ingredients and season to taste with salt and freshly ground pepper. Serve with grilled chicken or fish.
