Crawfish Fettuccine
1/2 cup butter
1 pound crawfish tails
1 teaspoon soy sauce
1 medium onion, chopped
2 cloves garlic, chopped
Salt and pepper
6 ounces fettucini noodles, cooked and drained
2 tablespoons butter, melted
1/2 cup Parmesan cheese
Melt 1/2 cup butter in a saucepan. Stir in crawfish, soy sauce, onion, garlic, salt and pepper. Sauté until onions and garlic are wilted. Toss fettucini with 2 Tablespoons butter and Parmesan cheese until nicely coated. To serve, mound warm noodles on plate and spoon crawfish mixture over it.
