Fried Green Tomato Slices
4 green tomatoes, thickly sliced
1/2 cup yellow cornmeal
1/4 cup white flour
1/4 teaspoon salt
Ground black pepper
1/3 cup bacon drippings, oil, or shortening
Dip the tomato slices in the cornmeal mixed with the salt, pepper and flour. Heat the bacon drippings, oil, or shortening in a heavy skillet and saute the slices in it quickly until browned on both sides. Remove to a plate with paper towel to remove extra drippings then serve immediately.
