I love the combination of sweet and savory and this dish lets the smoked sausage mingle with the flavor of the french toast. I prefer this method over refrigerating the mix overnight and losing all the texture of the bread.
Combine eggs milk, vanilla, cinnamon and brown sugar and stir well. Add bread chunks to egg mixture. Stir and make sure all bread is well coated. Refrigerate for 10 minutes for bread to absorb the egg mixture.
Brown sausage and set aside.
Spray a 9x13" pan with cooking spray. Place half the bread egg mixture in the bottom of the pan and distribute evenly. Evenly distribute the sausage in a single layer over the bread egg mixture. Top with remaining bread egg mixture.Sprinkle top with Demerara sugar.
