Russian Dressing With Sun-Dried Tomatoes

This thick dressing doubles beautifully as a spread over broiled tempeh and sauerkraut for a vegetarian Reuben sandwich. Add more soaking liquid if you prefer a thinner dressing.

Ginger Wasabi Dressing

Serve over a hearty, crunchy salad of slivered carrots, celery, red pepper, chopped bok choy, and chunks of tofu. Also try with a fruit salad of papaya, pineapple, and apples. Add more wasabi if you prefer it extra hot.

Green Goddess Dressing

This is a light and refreshing dressing which contains most of the original ingredients of the classic, sans mayonnaise and anchovies. Sour cream is also replaced with nonfat yogurt. If you have access to fresh tarragon, by all means add a couple of teaspoons.

Original Green Goddess Dressing

This creamy, herby dressing was invented at the historic Palace Hotel in San Francisco in the 1920's in honor of William Archer's hit play The Green Goddess. It enjoyed great success, especially in California, for decades and, in our opinion, is worth a revival.
