Pickled Chipotles


  • 1 cup red wine vinegar
  • 3 chipotle chili peppers, stemmed and seeded, if desired


  1. 1. Combine chiles and vinegar in small pot. Bring to a boil, reduce to a simmer and cook, covered, 5 minutes.

    2. Set aside to cool. Store in a jar in the refrigerator.
