Seasoning with Salt
The seasoning you use on the food you cook is just as important as the ingredients you use. I am a die hard fan of certain spice companies and I absolutely won't cook certain dishes if I don't have the right seasoning on hand. I am not just talking spices and herbs, the salt you use in your cooking is just as important as the rest of the seasoning. Some dishes are so simple that the salt is the only addition and the salt you use makes all the difference in the dish. If you use iodized table salt you are missing out on the true flavor of salt. I use kosher salt for all of my every day cooking but I also have a collection of fusion and artisan salts that are heavenly. Simple steamed vegetable are taken to a new level with a sprinkle of these incredible salts. There are almost as many different salts as there are spices and herbs and each has its own unique flavor. If you have not yet tasted these incredible salts I just urge you to go browse the world of Gourmet Sea Salt at the Salt Works.
