Happy St Patrick's Day
I currently have the worst cold I have had in years but it will not stop me from celebrating St Patty's Day! I have some hearty Irish blood in me and love any chance I get to show it. Even though I will be dragging my sorry sick butt into the kitchen to cook I will enjoy it. Boxty is never hard to make as it by tradition a way to use up your leftovers by filling these tasty "pancakes" with leftovers and an easy sauce. Today I have a beef roast that I originally thought would because either beef stew or pot roast is now going to be our Boxty filling. I sliced it into several in chunks so it will cook faster and browned it in my pressure cooker before throwing in onions, garlic and mushrooms and covering with water. Throwing on the lid, setting the timer and walking away is a very nice feeling. I already have my leftover mashed potatoes in the fridge so when my timer goes off on my beef I will grate my fresh potatoes and mix my Boxty batter. I plan to shred the beef for filling and serve with a brown gravy. I think I will pull out a bag of my frozen corn from last summer and serve on the side.
Just thinking about it makes me hungry! I think I have to send out hubby for some Guinness to go with dinner!
