Ingredients:
- 2 cloves garlic, minced
- 1/2 small onion, chopped
- 2 tbsp fresh lime juice
- 1 tbsp brown sugar
- 1/2 tsp curry powder
- 1/2 tsp crushed hot red pepper flakes
- 3/4 cup peanut butter
- 3/4 cup canned coconut milk
In a food processor or blender, combine garlic, onion, lime juice, brown sugar,
coriander, and hot pepper flakes. Process until garlic and onion are finely
chopped. Add peanut butter and coconut milk.
Process until smooth. Serve at room temperature. Store covered in the
refrigerator.
