Description
Garlic Chicken Bites with Tomato-Raisin Sauce
Ingredients

3 tablespoons minced cilantro

2 teaspoons coarsely ground pepper

8 cloves garlic, minced

1 pound skinless, boneless chicken thighs, cut into 1 1/2-inch chunks

1/3 cup tomato sauce

1 tablespoon firmly packed brown sugar

1 tablespoon distilled white vinegar or cider vinegar

1/2 cup raisins
Instructions
Mix cilantro, pepper, and 6 cloves of the garlic rub mixture over chicken. Place chicken pieces well apart in a lightly oiled 10- by 15-inch rimmed baking pan.
Bake in a 500° F oven until chicken is lightly browned and no longer pink in center; cut to test (18 to 20 minutes).
Meanwhile, in a food processor or blender, whirl remaining 2 cloves garlic, tomato sauce, sugar, vinegar, and raisins until raisins are chopped.
Serve chicken hot, with tomato-raisin sauce.
