Garlic Chicken Bites with Tomato-Raisin Sauce

Yields: 4 servings

Preparation time: 30 minutes

Ingredients:
  • 3 tablespoons minced cilantro
  • 2 teaspoons coarsely ground pepper
  • 8 cloves garlic, minced
  • 1 pound skinless, boneless chicken thighs, cut into 1 1/2-inch chunks
  • 1/3 cup tomato sauce
  • 1 tablespoon firmly packed brown sugar
  • 1 tablespoon distilled white vinegar or cider vinegar
  • 1/2 cup raisins
Mix cilantro, pepper, and 6 cloves of the garlic rub mixture over chicken. Place chicken pieces well apart in a lightly oiled 10- by 15-inch rimmed baking pan.

Bake in a 500º F oven until chicken is lightly browned and no longer pink in center; cut to test (18 to 20 minutes).

Meanwhile, in a food processor or blender, whirl remaining 2 cloves garlic, tomato sauce, sugar, vinegar, and raisins until raisins are chopped.

Serve chicken hot, with tomato-raisin sauce.
