Cranberry-Pear Relish

Choose ripe but firm pears which will retain their texture during cooking.

Yields: 3-1/4 cups

Ingredients:
  • 1-1/2 cups sugar
  • 1/2 cup water
  • 3 cups cranberries (12 ounces)
  • 2 medium pears, cored and cubed (2 cups)
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground allspice
  • 4 inches stick cinnamon
  • Bay leaves (optional)
  • Lemon peel (optional)
In a large saucepan, combine sugar and water. Bring to boiling, stirring to dissolve sugar. Boil rapidly, uncovered, for 5 minutes.

Add cranberries, pears, nutmeg, allspice, and cinnamon. Return to boiling. Cook 3 to 4 minutes or till cranberry skins pop, stirring often. Remove from heat. Transfer to a bowl. Cover and chill.

Before serving, remove cinnamon stick. If desired, garnish with bay leaves and lemon peel.
