Chocolate Chip Zucchini Bars
Yields: 75 small bars
2 cups Bisquick. baking mix
1 1/2 cups sugar
2 teaspoons ground cinnamon
1 cup shredded zucchini -- about 1 small
1 teaspoon vanilla
3 eggs
12 ounces semisweet chocolate chips
Directions:
Heat oven to 350 degrees.
Grease and flour jelly roll pan, 15 1/2x 10 1/2x 1". Mix all ingredients except
6 ounces chocolate chips until moistened. Spread in pan.
Bake until golden brown, 20-25 min. Sprinkle with remaining chocolate chips. Let
stand until softened, about 5 min.; spread evenly to frost.
Refrigerate until chocolate is firm, about 30 min. Cut into bars, 2x 1".
