Frosted Zucchini Brownies

Yields: 24 brownies

Ingredients:
  • 2 cups flour
  • 1/3 cup baking cocoa
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups shredded zucchini
  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 1/2 cup chopped walnuts
  • 2 teaspoons vanilla extract
  • 1/4 cup butter or margarine
  • 1 cup sugar
  • 1/4 cup milk
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup miniature marshmallows
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts -- optional
In a bowl, combine flour, cocoa, baking soda and salt. Combine zucchini, sugar and oil. Add to dry ingredients. Mix well. Stir in walnuts and vanilla. Pour into a greased 13x9" baking pan. Bake at 350 degrees for 35-40 min. or until a toothpick comes out clean. Cool on a wire rack for 30 min.

In a saucepan, melt butter. Stir in sugar and milk. Bring to a boil over med. heat, stirring frequently. Boil and stir 1 min. Remove from heat. Stir in chips and marshmallows until melted. Add vanilla. Spread over brownies. sprinkle with walnuts if desired.
