Chocolate Chip Zucchini Bars

Yields: 75 small bars

Ingredients:
  • 2 cups Bisquick. baking mix
  • 1 1/2 cups sugar
  • 2 teaspoons ground cinnamon
  • 1 cup shredded zucchini -- about 1 small
  • 1 teaspoon vanilla
  • 3 eggs
  • 12 ounces semisweet chocolate chips
Heat oven to 350 degrees. Grease and flour jelly roll pan, 15 1/2x 10 1/2x 1". Mix all ingredients except 6 ounces chocolate chips until moistened. Spread in pan. Bake until golden brown, 20-25 min. Sprinkle with remaining chocolate chips. Let stand until softened, about 5 min.; spread evenly to frost. Refrigerate until chocolate is firm, about 30 min. Cut into bars, 2x 1".
