Apple Cinnamon Scones

These scones go great with our Apple Crunch Tea.

Ingredients:
  • 1/2 cup flour
  • 1/2 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/3 cup butter
  • 1 cup quick-cooking rolled oats
  • 1 small apple, peeled, cored and chopped
  • 2 egg whites
  • 2 Tablespoons apple juice or skim milk
  • 2 Tablespoons honey
In mixing bowl stir together flours, baking powder and cinnamon. Cut in butter till mixture resembles coarse crumbs. Stir in oats and apple. Add egg whites, apple juice and honey. Mix well. Dough will be stick.

Spray a baking sheet with nonstick coating. With floured hands, pat dough into a 7" circle on baking sheet. Cut into 12 wedges using a long thin-blade spatula. Brush tops with alittle milk. Bake at 400 for 10-12 minutes until golden. Serve warm.
