The softness of the zucchini blends well with the more crunchy olives. Good color combination.
- 4 cups sliced zucchini
- 1/2 cup sliced black olives
- 1/4 cup italian salad dressing
- 1/4 cup grated parmesan cheese
- In a large saucepan over medium low heat combine zucchini, olives and Italian salad dressing. Cover and simmer slowly until zucchini is tender, about 10 minutes.
Sprinkle with Parmesan cheese on top before serving.
