Zucchini Bread

Ingredients

  • 1 cup walnuts
  • 4 eggs
  • 2 cups sugar
  • 1 cup oil
  • 3 1/2 cups flour
  • 2 cups unpeeled zucchini, grated
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 3/4 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 tablespoon vanill

Instructions

  1. beat eggs, gradually add sugar and oil. Combine dry ingredients and add alternately with zucchini. Stir in walnuts and vanilla. Pour into 2 greased 9-X5-X3-inch loaf pans. Bake at 350 degrees for 55 to 60 minutes. May be refrigerated or frozen.
