Wild Rice Pilaf

Ingredients

  • 2 oz. butter
  • 1/2 medium onion, chopped
  • 3 celery stalks, diced
  • 1/3 cup carrot, diced
  • 1/2 cup slivered almonds
  • 1/2 cup wild rice
  • 1/2 cup brown rice
  • 1 cup fresh mushrooms, chopped
  • 1 1/2 cups beef broth

Instructions

  1. In a large skillet, melt butter over medium-high heat and saute onion, celery, carrots, and almonds for two to three minutes. Add rice and mushrooms and saute for four additional minutes. Add broth, cover, and transfer to a preheated 350-degree oven for one hour.
