Green Goddess Dressing
This is a light and refreshing dressing which contains most of the original ingredients of the classic, sans mayonnaise and anchovies. Sour cream is also replaced with nonfat yogurt. If you have access to fresh tarragon, by all means add a couple of teaspoons.
- 5 ounces lite silken tofu
- 2 tablespoons plain nonfat yogurt
- 1 clove garlic, minced
- 1 tablespoon minced scallions or chives
- 1 tablespoon minced parsley
- 1 tablespoon tarragon vinegar
- Salt and pepper to taste
- In a blender, mix together all ingredients, stopping to scrape down sides as necessary, until smooth.
